| Pad Thai rice noodles | 170 g |
| Beef sirloin | 150 g |
| Cherry tomatoes, quartered | 6 pieces |
| Cucumber, julienned | 1 piece |
| Mint | 1 bunch |
| Coriander | 1 bunch |
| Onion | 1 piece |
| Wok oil with red chillies | 2 tbsp |
| Fish sauce | 5 tsp |
| Coconut sugar | 1 tsp |
| Lime | 2 pieces |
Cook the Rice Noodles
Boil the rice noodles for about 5 minutes until soft. Drain and rinse thoroughly with cold water to prevent further cooking. Set aside.
Marinade & Stir-Fry the Beef
Marinade the sirloin with wok oil with red chillies. Stir-fry until medium-rare. Slice into thin strips and set aside to cool.
Prepare the Dressing
Combine fish sauce, lime juice, and coconut sugar in a bowl. Mix well.
Make the Salad
Place rice noodles in a salad bowl. Add onion, cherry tomatoes, cucumber, mint, coriander, and sliced beef. Pour over the dressing and mix well before serving.
