Wake Up the Spices!
Heat a splash of oil in a pan over medium-high heat. Toss in the Massaman curry paste and stir-fry for a minute until your kitchen smells amazing!
Get That Beef (or Chicken) Coated in Flavor!
Add your diced beef (or chicken if you prefer) and stir it around, making sure each piece is coated in that fragrant curry paste.
Let it sizzle and soak up all the goodness for a few minutes.
Add Coconut Milk
Pour in 400ml of the coconut milk and give everything a nice stir.
Add the vegetables
Time to bring in the potatoes and shallots—these will soak up all the flavors and make the curry extra hearty.
Season to Perfection
Add a drizzle of fish sauce (or a pinch of salt) and a touch of coconut sugar to balance the flavors.
For that signature Massaman warmth, drop in the cinnamon sticks, bay leaves, and star anise—these aromatic spices will infuse the curry with deep, rich flavors.
Let everything simmer on low heat, allowing the beef to become melt-in-your-mouth tender and the potatoes to soak up the fragrant sauce.
Serve & Savor!
Spoon that rich, flavorful curry over fluffy steamed rice, sprinkle with fresh coriander, and dig in!
This dish is pure comfort in every bite.
